I always associate chocolate mousse with Spain. My first encounter was in 1974. I was living in Calella de la Costa in Catalunya. I had found employment with a local bar owner “Bobby” Berkeley. My job was to open up and clean Bobby’s Bistro. The menu in the bistro was inspired by one of Bobby’s friends; an American woman. Barbecued pork ribs, potato salad and chocolate mousse were the main attraction. She showed me how to make the mousse.

El Mousse de Chocolate

We are eating with our hispanophile neighbours this evening. They are bringing ajoblanco and chorizo al sidra . We are making tortillitas de camarones , atun rojo con guisos y pimiento rojo and of course chocolate mousse.
