Waitrose have started selling clams and cockles, fished sustainably from Poole in Dorset. They are supplied by The Dorset Shellfish Company who have been dealing with the restaurant trade prior to lockdown. It makes more sense to me than flying in littleneck clams from New Zealand!
I made cockles with spaghetti. Garlic, pancetta, lemon peel, white wine and grated tomato for the sauce and Chervil from our garden instead of the usual parsley.
