We couldn’t keep up with the lettuce we have been growing. In one of the final legs of the “race” we made this Roquefort with Walnut salad with a Walnut Oil vinaigrette dressing. The traditional “Frisée” replaced with the Escarole. Not strictly a lettuce but a member of the Endive family. It is bitter in the same way and worked perfectly. In the meantime the Lollo Rosso has started to bolt and the Webb’s Wonder has rotten hearts.
