Lettuces all arrive at once, no matter how much secession planting you try! Too much to eat or even give away. So usually it is left to “bolt” and then thrown on to the compost bin. Not this year! The plan is to consume it regularly as part of our daily meals. The French do it this way by including a salad course.

Right now as we thin the rows we are taking the opportunity to consume as well as replant. We have made a batch of vinaigrette. The salad spinner is at hand. So let’s see how we go!
