My late brother-in-law Sylvain taught me how to make vinaigrette. It’s a confidence thing rather than a recipe thing. I have used Dijon mustard, red wine vinegar, olive oil, salt pepper and honey in a larger bowl than you think that you need. Sylvain would make the vinaigrette in the salad bowl and add the salad to the vinaigrette rather than the other way around.
