If you have read any of my other artichoke posts you will know that I am drawn to cooking them in the traditional Conileña way as a stew with broad beans and peas. I wanted to try something different so I purchased a couple of large globes from the Tuesday market here in Thame and decide to steam them. I was strangely nervous about cooking them in this way and kept putting it off. Finally before the artichokes had completely dried out I went for it.
I followed the method outlined by Elise Bauer on simplyrecipes.com In an ideal world I would dip the petals in clarified butter but this wouldn’t work for Valerie. I think mayo would overwhelm the delicate flavour. In any event I have overcome my reluctance
