Calçotada!!!!! Made some romesco sauce and grilled some scallions
Calçot is a type of scallion. The calçot from Valls (Tarragona) has an IGP (Protected Geographical Indication.) The method of growing them (increasing the depth of the soil around the stems throughout autumn and winter, means they take on the shape of small leek.
The Calçotada in Catalonia celebrates the harvest of calçots. They are grilled over a hot fire of vine trimmings,wrapped up in newspaper, served on terracotta tiles and eaten, after peeling with bare hands, by dipping them one by one in Romesco (salvitxada) sauce. They are accompanied by red wine and bread. This is followed by roasted lamb, botifarra sausage and white beans.
