We found the xabyros (Greater Weever Fish) in the Mercado San Martin in San Sebastián. Known as Arañas (spiders) in Conil. In San Sebastián they were sold with the venomous spines removed. In France these are the kinds of fish that would end up in soup but in Càdiz they deep fry the filets. The skin crisps up well. The flesh is delicate and reminiscent of Sole.
