I found these Salted Sardines in a round wooden box in the Mercado Central in Càdiz. They are known as Sardinas de Bota referring to the box. Also known as Sardinas de Arenque (Herring Style). They are sometimes called Herrings in Spain! The fish are whole and have not been eviscerated. They can also be found smoked. Traditionally served with fried eggs.
