Last of last year’s bottled tomatoes used to make a store cupboard favourite. Tomatoes are acidic, ideally this should be tempered with something sweet. Rachel Roddy uses red Vermouth. I would add butter at the end of the cooking as well but Valerie sometimes has a bad reaction to butter so we avoid it.
