I regularly comment on how difficult it is to buy fish here in Thame. Waitrose on a Friday can be good for wild caught fish such as Brill, Turbot and Lemon Sole. In the late summer and early Autumn they sell Cornish Sardines and West Country Sprats.. l am rarely in Thame during the week and I had forgotten that there is a fishmonger at the Tuesday market. John and Martyn from Sharky and George sell fish from the back of a van. They source from small suppliers at Billingsgate? They have a permanent shop in Bedford and visit markets in Chipping Norton and Chesham.
The selection is very different from the standard supermarket offer, Today they had Gurnard from Norfolk and Cornish Squid. I bought a couple of Gurnard and will make soupe aux poissons tonight.

I roasted the fish before adding to the soup. I passed the finished soup through a “mouli” to maintain some texture . I have read that fish soup should not be finished in a food processor as this produces a gritty consistency.
