The fish counter in Waitrose comes alive on Friday. Lots of wild caught fish elevate the offer above the usual supermarket suspects. This time I found some Lemon Sole caught in the North East Atlantic.
They are not strictly “soles” but members of the halibut family with eyes on the right.
