Waitrose sell this in a frappe of four heads which is about right as if I buy in larger quantities I don’t get through it before it dries out.
This confit comes from Gizzi Erskine’s book “Slow” I like the idea of keeping the heads whole rather than peeling the cloves and cooking them separately.
