Once you have tried pork from Iberian pigs it is hard to buy anything else. The meat has a higher fat content than pork from ordinary pigs. The meat is darker in colour and flavour is far better. Also the fat content is unsaturated – much more like olive oil – especially in the case of acorn-fed animals. We bought these chops from the Carniceria José Andres “the surgeon” in the Mercado de Abastos . He sells both types of pork and the difference in appearance is notable. The marbling in the ibérico is absent in the others.the chops don’t dry out when grilled .
Conil loves pork. It is very difficult to buy lamb in Conil. Most of the butchers specialise in pork and poultry.
