In Conil you can buy green peppers specially for frying. They have thin skin which is essential. The narrow and elongated variety ‘Cristal’ are the traditional peppers for this. A native of La Rioja. these traditional varieties have better flavor and tend to produce fruits without or with few seeds. This means they can be fried whole. They are fried in olive oil at a low temperature to prevent them burning.

Galician pimientos de Padrón are increasingly available in Conil. They are also sold in Waitrose.

We roast them rather than fry them and sprinkle them with Maldon salt.
