Among the huge variety of cephalopods available in the fish markets on the Costa de la Luz I have noticed that the naming of these different species seems inconsistent. Often they are referred to simply as Calamares.
Lúas are the inferior cousin of the Calamar. Differences at length of fin – third of body length for lúas over two thirds for calamar, colour sometimes darker sometimes brownish and not the pale pink, speckled skin of the Calamar . The “teat” at the end of the body gives it a distinctly “condom” like appearance
More likely to be stewed to tenderise the meat than cut into rings and fried. They have a stronger flavour.
They are also known as “Potas”
