Manteca Colorado y Zurrapa

A lost tradition in the UK is the use of pork or beef dripping from roasted meat as something to be enjoyed spread on bread or toast . This tradition is alive and well in Andalucia . Manteca Colorado (red lard) is commonplace in bars and restaurants and is usually served for breakfast. Usually pork fat, flavoured with pimentón and replete with morsels of pork it is really tasty. In Málaga this is taken to a higher level in the form of Zurrapa in which cooked pork loin is submerged in Manteca.the featured image is of Zurrapa on sale in the Atarazanas market in Malaga where several stalls specialise in this local favourite.
