Spot-tailed mantis shrimp are rarely used other than to flavour fish stock. They’re really tasty and inexpensive. Difficult to peel and not much meat.

We had them one New Year’s Day in the Plaza del Cabildo in San Lucar de Barrameda, washed down with glasses of Manzanilla. I thoroughly enjoyed the whole experience.

Here’s a thing- I will eat more or less anything. The one exception is insects. I can’t bring myself to try them. I know that this is irrational. For me the Galera is very insect like and I wonder if I prepared them at home that my brain would categorise them as shell fish/ prawns and therefore OK to eat or not. I intend to find out.
