The Galindo Bar has recently been refurbished. A great improvement! In Conil such refurbishments are usually driven by a change of management and signal a change in the food on offer. In this instance neither is the case. The family remain firmly in charge and the food- traditional Conileńa fare remains fabulous. In particular the menu del dia which usually includes some cocina de cuchara. A dish designed to be eaten with a spoon (and the obligatory bread). The star of these dishes will usually be a vegetable or pulse; lentils, chickpeas or potatoes are the favourites. This will be flavoured with peppers onions and tomatoes and some form of protein such as chorizo, cuttlefish, pork or maybe some tripe.

The two brothers Galindo run the business, the father helps out and I suspect the mother does most of the cooking.
